As seen below the torque values are the same for all C6s (ZO6) bottom
What would be different is the Z06 top speed is above what the car could do where for the LS2 it is set at 187 MPH
Also the ZO6 is set with a 7,000 rev limiter which is higer then the 6,600 for the LS2 so it depends on the gear being used and which limit hits 1st.
In answer to your question then could your car hit the stock rev and speedo limits and if so they can be jacked up a bit via tune.
As to stock TM values would have no ill effect at the top end since PCM is looking for sudden quick torque values before TM kicks in which would not happen in upper gears at high speed and that is why if you notice the table ends at 3,000 RPMs
